Sitting in one of the tall towers of the 500 Republica area, this fine restaurant fits perfectly. An area where the crème-de-la-crème, such as politicians, diplomats, and aristocracy of Coruscant and those visiting from other planets gather, the 500 Republica is among the richest area of Coruscant. It is home to many theatres, swank shopping outlets, hip night clubs, posh penthouses, the Galactic Senate and other Senate buildings, and of course, fine restaurants.
The Sunset resides on the 673rd floor of an 800 floor megascraper, and occupies the entire floor; one third on either side is compromised of luxury dining area, primarily constructed in marble, with ornate wooden furniture, fine paintings, and large balconies. The side facing the rising sun is known as the Sunrise Room, and is compromised of primarily white marble, with white table-settings, and adjustable-tint windows; this side is used more in the morning and early afternoon. The opposite side, the Sunset Room, is very much the opposite, with a clear view of the setting sun, it’s compromised more of dark green marble, with dark green table settings, and in stark contrast to the earlier-day orientation of the Sunrise Room, the Sunset Room has a full bar opposite the windows; this side is used more in the later portion of the day, and typically sees more use overall, as it also sees many party-goers in the early hours of the morning. A third of the area between these two rooms is the waiting room, which has giant murals for walls, lush furniture, an entrance to either of the dining areas, an ornate wooden podium behind which the hostess or host for the shift waits, or a water/waitress in their temporary absence of seating someone or mingling, and of course, the main lift. What occupy the remaining area are food and liquor storage, and the large kitchen, which is the Head Chef’s domain
The restaurant has six chefs, four waiters/waitresses per dining area, six table-bussers, two bartenders in the Sunset Room, and one host/hostess during all hours of business, between six in the morning to three in the morning, save for between midnight and closing, when the Sunrise Room is closed completely save for by special request and a third of the staff is kept on shift. They serve a wide range of foods, many from different cultures, and all prepared with excruciating care. Also, many types of alcoholic, and non-alcoholic, beverages are served, also from a wide range of cultures, and typically prepared by the best bartenders available. There is a reason the Sunset is expensive, though surprisingly not as expensive as one would imagine, just enough to turn a good profit, while not being obscenely priced like many upscale restaurants of equal quality.
In short, the Sunset Over Coruscant was made all out by the owners, and remains that way. It has a healthy business in the morning and early afternoon, with business typically lessening between the lunch crowds and the dinner crowds, though in the evening is when many often have to wait for a table due to the business, and there is almost always enough business after midnight from the typically younger crowds to make it worthwhile to keep it open until their current set closing time. Reservations are not required, though they are recommended.
